Fruit leather sheet
Fruit pulp dried slowly into a flexible edible or non-edible sheet. With pectin it turns glossy and firm; without, soft and supple.

Red to amber depending on fruit. Glossy, flexible, slightly sticky.

Pectin pulp
Pectin-rich peel or pulp500g fruit pulpFruit peel and pulp rich in pectin. Gels with sugar and acid.
Examples Apple, berry, quince, plum
Note — Cook down first.
Fixed ingredients
- Sugar · 100g
- Lemon juice · 1 tbsp

- baking paper
- oven on lowest setting.
Refinements and variations
- Layer two thin colours for a marbled sheet
- Press dried herbs in before drying.
