Apple pomace leather

The leftover pulp from apple juicing pressed and dried into a thick, warm sheet.

What you’ll make

Amber to russet, slightly rough, flexible when warm.

Flexible slots (flex around your material)

  • Pomace

    Pectin-rich peel or pulp500g

    Fruit peel and pulp rich in pectin. Gels with sugar and acid.

    Examples Apple, pear, quince pomace

Fixed ingredients

  • Sugar · 80g
  • Glycerine · 1 tbsp
  • Lemon juice · 1 tbsp

Equipment

  • Saucepan
  • baking paper
  • oven or sunny windowsill.

Refinements and variations

  • Quince or pear pomace both work; quince is stiffer and sweeter-smelling.
