Banana peel leather

Ripe banana peel blitzed, strained, seasoned with glycerine and dried slowly.

Dark brown, flexible, faintly sweet.

  • Peel

    Pectin-rich peel or pulp3 peels

    Fruit peel and pulp rich in pectin. Gels with sugar and acid.

    Examples Ripe banana peel

    Note — Scrape away the inner white.

Fixed ingredients

  • Glycerine · 1 tbsp
  • Lemon juice · 1 tsp

Equipment

  • Blender
  • sieve
  • oven on lowest setting.

Refinements and variations

  • Mix with coffee grounds for texture and faster drying.
